Vegan Tuesday - Chipotle "no-pork" sandwich
I see vegan versions of the "steak" philly and BBQ pulled "pork" sandwich all the time. So I wanted to try my own vegan version with the ingredients I had at home.
Ingredients:
1 block of tempeh (I freeze mine and let it thaw overnight in the fridge) sliced
1 pepper whatever colour you like, thinly sliced
1 small onion, thinly sliced circles
1 Tbsp oil
1/2 cup BBQ sauce
1/2 Tbsp of chili Chipotle powder
1/3 cup of vegetable broth

White sauce ingredients:
Vegenaise
Your choice of spices to mix in (I used a bit of Dijon mustard, onion powder, curry powder, Italian seasoning)
Instructions:
1 - heat the oven at 375 F
2 - In small bowl (or measuring cup), mix together BBQ sauce, chipotle powder and broth
3 - place your thinly sliced tempeh in a narrow dish and cover with sauce (move it around gently to make sure all the tempeh is covered in sauce)
4 - bake uncovered for 25-30 minutes, flipping slices around half way through
5 - While the tempeh is baking, heat up the oil in a pan.
6 - stir-fry onion and pepper on high heat until soft (you can brown it too). 5-10 minutes or so on medium/high heat
7 - Once everything is cooked. Put together sandwiches. 2-3 slices of tempeh per sandwich depending of the size and thickness of your bread
8 - Add some spiced vegan mayo
Was it good? YES IT WAS!! :)
Is it husband-approved? ABSOLUTELY (after we ran out of bread he ate the sliced tempeh with the veggies on top... no bread)
Is it kid/teenager approved? Nah. I tried though.
He totally missed out.
Never tasted tempeh, but it sounds good! :)

This looks delicious! I just started eating tempeh after years of avoiding it. *haha* I never thought I'd like it. But it's good!!! :) I cannot wait to try this out! :)
