Vegan Tuesday - Cauliflower poppers

We had a head of cauliflower that needed to be eaten, but I wasn't super hungry for dinner tonight.  So I made cauliflower poppers.
 
Ingredients:
1 large head cauliflower, chopped to florets
juice of 1 lemon
3 cloves garlic, minced
2 teaspoons Dijon mustard
1 tablespoon olive oil
half a teaspoon of salt (the original recipe from the link above says 1 tsp but I reduced mine to half a teaspoon)
1 teaspoon dried dill (I didn't have dill so I chopped a small dill pickle from a jar + 1 tablespoon of juice from the jar)
fresh black pepper, to taste
2 tablespoons nutritional yeast 
 
Mix all ingredient together (except cauliflower) to create a sauce.  Once that's done, add the florets and mix well until all florets are covered with sauce.
 
Bake on a cooking sheet at 400 F, for about 40 minutes, flipping once about half time.
 
Serve with your favourite dipping sauce.  I used a spicy tomato sauce! Yum!  
Husband loved it too :)
Note: Since this is not a balanced meal, we also juiced a healthy mixture of fruits and veggies (5 cups of juice).  Some for dinner, and more for tomorrow morning.  I love having a nutritious juice first thing in the morning, especially since I'm up early tomorrow 
for an 8:30 AM class!

  7. YUM! I've been really into cauliflower this season (should have guessed you'd cook cauliflower too, since we have so much in common. ha!). I've discovered that pureed it's amazing as a replacement for cream and butter in things like soup and mashed potatoes. My new favorite thing. I'll have to give this a whirl!
