Vegan Tuesday: Alex-approved noodle dish

What's on the menu for today's Vegan Tuesday?
Alex-approved noodle dish!
This is a very tasty and relatively cheap recipe to make.  The noodles cost us less than $0.79 a pack (and I used a pack and half).  The cabbage was $1.29.  Same for the cilantro.  The rest is just stuff I usually have on hand at home.  I am happy to report that my son (the teen) gave it a thumbs up!!  This is the ultimate positive rating!  
Ingredient list:
3-4 cups cooked noodles
3 cups of sliced green cabbage
1 onion sliced in half-moons
2-3 medium garlic cloves, minced
1 cup of other vegetables (I used frozen  The Toby Brand Cookin' Greens)
3-4 Tablespoons of soya sauce
1 Tablespoon of balsamic vinegar
2 Tablespoons of veg hoisin sauce
2 stalks of green onions
Optional: chopped fresh cilantro, chopped peanuts, dried red pepper flakes
 
Cooking instructions
1 - In a pan or wok, cook cabbage on medium heat with a bit of oil for about 15 minutes, stirring once in awhile (*note: adding a bit of water also helps it not stick to the pan.)
 
2 - In a different pan, add oil, then cook onions and garlic until soften 
(about 5 minutes).
3 - Add the mixed vegetables to the onions and garlic, and cook for another 5-10 minutes.
  
4 - Add the veggies/onions/garlic to the cabbage pan.  Mix well.  
Add a bit of water if needed.
Add cooked noodles and green onions.  Mix well.
 
Add soya sauce, hoisin sauce, balsamic vinegar.
Mix everything together but be gentle with the noodles.
At this point, you can add crushed peanuts, fresh cilantro and red pepper flakes if you'd like.
 
 
 
And here's what it looks like on a plate topped with peanuts, cilantro and red pepper flakes.
Delicious!!
