Sweet Potato and Lentil Slow Cook:
4 cup of vegetable broth
3 cups of sweet potatoes cubed
one onion chopped
4 cloves of garlic minced
1/2 tsp of cumin
1 tsp of ground ginger (or fresh root is fine too)
1 tsp of cayenne pepper (less if you don't enjoy spice)
3 tsp of curry power (more or less depending on taste) *I had 3 tsp in mine
1 1/2 cup of dry lentils -any kind- rinsed (we used red)
Put everything in slow cooker at "low setting" and cook for about 4 hours. We left it on warm for another few hours before the meal was ready.







This sounds yummy! I continually swear that I'm going to break out my slow cooker, but it never happens!
