Vegan Tuesday - 3 recipes!

I have 3 vegan recipes to share with you today. 
I made these last week and they are all delicious!
 
1) Vegan Hot Stuff Shepherd's Pie
2) Share the Love Rice & Veggies Dish
3) Golden Milk (recipe from Kisses and Chaos)
 
1st recipe:  Vegan Hot Stuff Shepherd's Pie
Indredients:
1 package of meatless ground round (*I like to buy this stuff 
when it's on sale and freeze it)
1 small onion chopped
1 happy leno (jalapeno) chopped
2 tbsp of taco spices
6 large potatoes 
corn (I buy organic frozen)
paprika
vegan Earth Balance margarine (if you want)
a bit of oil
Instructions:
Very easy.  Same directions as any other shepherd's pie.  Obviously, start by peeling the potatoes, boiling them, and then mashing them.  I added a bit of vegan margarine.
 
In a pan, heat a bit of oil.  Add onions and happy leno, and stir/cook until soft. 
 
Add the ground round to the pan.  Also add the taco spices.  And stir a few times.  Let it heat up for 10-15 mins.  (the ground round is already cooked but I like to heat it up before putting it in the oven to mix in all the flavours)
In a smallish pan, put the ground round as the bottom layer, then cover with corn, then with the mashed potatoes.  I added a bit of margarine and paprika on the potatoes.
Bake in oven at 375 C until the potatoes start to brown.  And serve!

 
2nd recipe:  Share the Love Rice and Veggies
Ingredients:
oil
1-2 cloves of garlic, minced
1 tbsp of sesame seeds
1 tbsp of maple syrup
1 cup of (dry) brown rice
1 large sweet potato (julienne)
1 cup of baby spinach
1 package of your favourite type of mushroom (sliced or whole)
1 cup of bean sprouts
 
Instructions:
Start by cooking your rice following package instruction.  Once cooked, set aside.
Boil the bean sprouts until soft (couple of minutes), strain water, and set aside.
Heat the oil in a pan.
Add the sweet potato and cook for 5 mins. Set aside.
Add the mushroom to the pan and sauté for about 5 minutes.  Set aside.
Add a bit more oil to the pan if needed.  Add garlic.
Add spinach, sesame seeds and maple syrup.
Stir and cook for a couple of minutes until spinach is soft.
Arrange all in a serving dish.
 
Everyone gets to share the love by making their own plates!  
For my plate I added veg hoisin sauce.
 
3rd recipe:  Golden milk
I can't believe I had never heard of this delicious beverage before reading about it at Kisses and Chaos. Turmeric is one of my favourite spices because of all its health benefits.  Check out the (very easy) recipe over at K&C.
*note: I used maple syrup instead of honey

  2. mmm the rice and veggies looks delicious. Last year I ate no meat for february, and I am thinking about doing it again. Ill have to bookmark your recipes :)
